Begin by making El Monterrey Enchilada Sauce:
For 1 package of Mix, use 2 quarts of water.
- Slowly combine El Monterrey Sauce Mix with water, making a thick paste
- Stir until smooth
- Add the remainder of water
- Bring sauce mixture to a boil
- Stir continuously while cooking

- Preheat oven to 350/400 degrees depending on altitude
- Soften corn tortillas by dipping them in El Monterrey Enchilada Sauce that has been prepared on medium/high heat
- Lay tortillas flat on a baking sheet
- Spread desired fillings diagonally on each tortilla
- Roll tortillas closed
- Sprinkle each enchilada with additional grated cheese
- Cover enchiladas with remaining El Monterrey Enchilada Sauce to taste
- Cook in oven until cheese on top of each enchilada is melted and golden brown
- Top with chopped lettuce, tomatoes, and onions to taste.
- Serve with side of El Monterrey Spanish rice, El Monterrey Chile con Queso, Guacamole, and sour cream.
